1 8-inch pie shell
¾ cup sugar
1 teaspoon flour
½ teaspoon salt
½ cup (1 stick) unsalted butter, melted but not quite liquid
1 teaspoon vanilla
1 teaspoon lemon extract or the zest of 1 lemon
1 cup milk, at room temperature
Line an 8-inch pie plate with the pie crust. Do not bake the crust. Chill until ready to cook.
Preheat the oven to 350°F.
Beat the eggs well, then add the sugar mixed with flour and salt.
Mix well and add the butter, vanilla, and lemon extract. Stir thoroughly and pour in the milk. Pour the mixture into the pastry-lined pan, Bake in the preheated oven for 30 – 35 minutes until the pie is golden brown.
