Shrimp Aguachile

This light refreshing recipe is similar to ceviche and is traditionally served with tostadas. You can also serve them with corn tortilla chips.


1 pound raw shrimp, peeled and deveined

1 cup of water

1 cup freshly squeezed lime juice

1 bunch cilantro

1 serrano chili

1 tsp salt

1 red onion



Split the shrimp in half and set aside. The red onion into thin slices. Pour the water, the lime juice, the cilantro, the Serrano chili, and salt into a blender. Blend until smooth. place the shrimp in a single layer in a non-reactive pan (either glass or ceramic). layer the onion slices on top of the shrimp. Pour the lime mixture over the shrimp making sure it's completely covered. Refrigerate for at least half an hour or up to four hours. Top with avocado slices. Serve with tostadas or tortilla chips.
