These yams are both gorgeous and delicious! They are sweeter and more dense than regular sweet potatoes. Roast them in a 350 degree oven for 1 hour or until your can pierce them with a fork. Peel them, scoop out the flesh and mash with a fork. I add a little salt and sprinkle with sesame seeds. You can also top them with melted butter or sesame oil. Enjoy!
