Lemon Roasted Potatoes

This is one of my favorite potato recipes. The lemon and garlic add a surpising bit of brightness texture.


Lemon Roasted Potatoes

 

Ingredients

1 pound Yukon Gold potatoes, cut into 1-inch pieces

1 TBSP salt

3 cloves minced garlic 

Juice of 2 lemons

1/2 cup olive oil 

1/2 cup fresh lemon juice

 

Method

Preheat the oven to 450 degrees.


Boil the potatoes in salted water until fork tender.  


Whisk together the garlic and lemon in a small bowl.


Line a baking sheet with parchment paper and add the potatoes.


Sprinkle the lemon juice and garlic mixture over the potatoes.


Drizzle the potatoes with olive oil and bake until your desired crispness.
