These vegan tacos taste just like pulled pork. Seriously!!!
Jackfruit Tacos
Ingredients
3 TBSP vegetable oil
3 cups fresh or canned jackfruit
1 white onion, sliced
3 cloves garlic, minced
Juice of 1 lime
1 TBSP cumin
1 tsp. smoked paprika
1 tsp. oregano
2 TBSP honey
2 cups broth or water
Salt and pepper
taco shells
1 avocado, mashed
½ red onion, sliced
¼ cup vinegar
Sour cream
Method
If using fresh jackfruit, remove the seeds, and cut the remaining fruit into strips. If using canned jackfruit, shred the pieces of jackfruit so it resembles pulled meat. Sauté the onions and garlic in vegetable oil until translucent. Add the jackfruit, white onion, lime juice, cumin, paprika, oregano, honey and broth or water. Cook until the mixture is almost dry. Salt and pepper to taste.
Meanwhile, place the sliced red onion in the vinegar for a quick pickle. Fill the taco shells with the jackfruit, avocado, pickled onions cilantro and sour cream.
