I love Cornish Hen for its rich, juicy texture. Adding grapes to the mix reinforces its underlying sweetness.
Cornish Hen with Grapes
1 Cornish Hen, split in half
3 TBS butter
2 cups green seedless grapes
2 cups chicken stock
Salt and pepper
Melt butter in a skillet over medium heat. Place Cornish Hen halves and cook until well browned on each side. Test for doneness by piercing a thigh which is the thickest part. If the juices run clear, its done. If its still red or pink, keep cooking.
Add the chicken stock to the pan and let it reduce by half. Once the sauce has been reduced, add the grapes. The grapes will become slightly translucent and will puff up slightly. Salt and pepper to taste.
