Bulgarian Tarator

Tarator is a refreshing cold yogurt and cucumber soup that's especially popular in Bulgaria during the hot summer months.


Traditionally, Tarator is served as an appetizer or a light meal, particularly during gatherings and festive occasions. Its combination of yogurt and fresh herbs symbolizes the importance of dairy and fresh produce in Bulgarian cuisine. It’s light, creamy, and packed with fresh flavors. Here’s a simple recipe to make it:


Ingredients


·         2 cups plain Greek yogurt

·         1 cucumber, peeled and grated

·         2 cloves garlic, minced

·         2 tablespoons fresh dill, chopped

·         2 tablespoons olive oil

·         1/4 cup chopped walnuts (optional)

·         Salt and pepper to taste


Instructions


·         In a large bowl, mix the Greek yogurt with the grated cucumber.

·         Add the minced garlic, chopped dill, and olive oil. Stir until well combined.

·         Season with salt and pepper to taste.

·         If desired, stir in the chopped walnuts for extra texture.

·         Chill in the refrigerator for at least an hour before serving.
