Rack of Lamb with Herb Butter

This is another example of Edna Lewis art of turning simple ingredients into elegant dishes.

Rack of Lamb with Herb Butter


1 Frenched rack of lamb

Salt and pepper

1/3 cup of softened butter

Assorted herbs of your choice (chervil, chives, parsley, scallions)

Watercress for garnish


Preheat oven to 450 degrees

Generously salt and pepper the rack of lamb and place on a roasting rack in the oven for 45 minutes or until an internal meat thermometer reaches 140 degrees.

Meanwhile, finely chop the herbs and mix them into the softened butter.

Remove the lamb from the oven and transfer to a platter.

Spread the butter herb mixture on the lamb and garnish with watercress.
