Perfect Flan!

Flan is one of my favorite desserts. Mine is made with coconut milk and drenched in rich caramel.


1 cup sugar

1 can coconut milk

1 can sweetened condensed milk (or sweetened condensed coconut milk if you’re lactose intolerant)

5 eggs

1 cup sugar


Heat sugar over low heat until melted and golden brown. Watch carefully, melted sugar goes from golden to burned in a few seconds. Pour melted sugar into a metal bundt pan and swirl to coat halfway up the pan. Place the rest of the ingredients into a blender and mix until smooth. Pour the egg mixture into the bundt pan. Place the pan into a pot of simmering water and cover. DO NOT LET THE WATER BOIL otherwise your flan will turn into scrambled eggs. Cook until a knife inserted into the flan comes out clean. Allow to cool to room temperature and invert onto a large plate.
