Mongolian Beef Stir-Fry

This is one of my favorite quick dinners. Everything comes together in about half an hour and loaded with flavor.

Mongolian Beef Stir Fry

 

Beef Marinade Ingredients

12 oz beef

1 tsp baking soda

1 TBSP cornstarch

2 TBSP water

1 TBSP oyster sauce

1 tsp soy sauce

1 tsp tamari soy sauce

1/4 tsp white pepper powder

1 TBSP oil

1 TBSP cornstarch

 

Stir Fry Ingredients

1 medium onion

5 stalks of scallions

2 cloves of garlic

½ red bell pepper

½ green bell pepper

4 dried chili peppers

 

Sauce

1 TBSP oyster sauce

1 TBSP soy sauce

1/2 tsp tamari soy sauce

1/2 tsp chili sauce

1 tsp sugar

1 TBSP cooking wine

Cooking Ingredients

1 oz oil

2 oz oil

1 TBSP Sesame Oil

 

 

 

METHOD

Cut beef against the grain into small chunks or strips. Rinse the beef in cold water and squeeze out excess water.

In a bowl, add baking soda, cornstarch, water, oyster sauce, light soy sauce, tamari, and white pepper powder. Mix them thoroughly.

Add the beef slices to the marinade, and mix well. Set aside.

On a separate cutting board, slice the onion. 

Chop the scallions into 1-inch pieces. Separate the white from the green parts.

Mince the garlic.

To cut the green and red bell pepper into 1-inch strips.

 

Mix the oyster sauce, light soy sauce, dark soy sauce, chili sauce, sugar, and cooking wine in a small bowl.

Prepare beef for stir fry

Once the beef has absorbed all of the marinade, add oil to the beef and mix it in. The oil will help seal the marinade in and lock in the juices.

Then, add cornstarch to the beef as well and give it another mix. The cornstarch will help the beef crisp up in the frying process.

 

Add enough oil to a pan or wok to cover and deep fry the beef. Turn the stove to high heat and let the wok heat up until it's shimmering, but not smoking

Add the beef and fry it for about 2- 3 minutes. The beef will be cooked through and crispy.

Turn off the stove and remove the beef from the wok and let the oil drain from the beef.

Pour the oil out from the wok into a separate container. You can reuse this oil for cooking other dishes. The oil that's remaining in the wok will be enough to finish cooking the rest of this dish.

 

Stir-fry the veggies

Turn the stove back on, and add the garlic, dried chili pepper, onion, and green onion whites, and green and red bell peppers. Fry them for about 2-3 minutes, until they're fragrant and cooked through.

Add the beef back in and stir-fry for about 30 seconds.

Then add the sauce and the green parts of the green onion. Stir-fry for 30 seconds more, then turn off the heat.

Finish by drizzling sesame oil over the top and mix to distribute.

Season to taste and serve immediately over rice.
