I love this coconut flan and I know you will, too!

Coconut Flan


1 cup sugar

1 can sweetened condensed milk

2 ½ cups milk or heavy cream

1 can coconut milk

5 eggs


Preheat oven to 350 degrees F (175 degrees C)

In a heavy bottomed saucepan, heat 1 cup of sugar over low heat, stirring occasionally until the sugar melts and turns golden brown. Pay close attention to the color of the melted sugar and do not let it become dark brown or else it will burn and turn bitter.

Pour the melted sugar into a Bundt pan and swirl to coat the bottom of the pan evenly. Set aside.

Mix the rest of the ingredients in a blender until smooth. Pour the mixture into the Bundt pan.

Place the filled Bundt into a larger pan and add 1 inch of HOT water to the outer pan. Bake in preheated oven for 50 to 60 minutes, or until set.

Let cool to room temperature and invert the contents on a large platter to serve.

Tip: You may have to loosen the flan with a knife to release it from the pan.
