Baobab Panko Crusted Salmon, adapted from Black Food

Baobab powder has a deliciously earthy and acidic flavor that pairs perfectly with fish. You can find baobab powder in specialty food stores or online.


Baobab Fish Rub

1 TBSP Baobab Powder

1 tsp Salt

½ tsp Garlic Powder

½ tsp Onion Powder

½ tsp Dried Basil

½ tsp Dried Oregano

½ tsp Cayenne Pepper

½ tsp Smoked Paprika

1 tsp Dark Brown Sugar

2 filets of salmon

1/3 cup Panko Breadcrumbs

1 ½ tsp Olive Oil


Preheat vent to 350 degrees.

Combine ingredients for the Baobab fish rub with the panko crumbs. Mix in the olive oil until the crumbs are thoroughly coated. Top the salmon with the panko mixture and press firmly. Heat an ovenproof pan over medium heat and add 2 tablespoons of olive oil. Place the salmon, panko crust side up, in the pan and cook for 2 minutes. Transfer the fish to the oven and bake for 10 minutes. Serve immediately.
